Sometimes you need to change up taco night and have fajitas instead. Just as easy as tacos! For this, I sliced 1 onion and 2 green peppers (you can add whatever colors you want)...sautee them in a little olive oil until they are soft. In another pan, sear 2 chicken breasts. Once seared, transfer the chicken to the pan with the onions & peppers to finish cooking. Next, remove the chicken and slice into thin strips. Put the chicken back in the skillet with the peppers & onions and add your favorite Mexican seasoning..taco, fajita etc...and a 1/2 bottle of beer and mix. While those flavors are meshing, wrap tortillas in damp paper towels and pop in the microwave for 30 seconds and keep wrapped up until you're ready to serve. I served mine right out of the skillet to keep them hot!
