Tomato Soup & Grilled Cheese

Tomato Soup & Grilled Cheese is a classic comfort food combination! Making your own homemade tomato soup is SO easy and once you try this, you'll never go back to the canned stuff again!

Tomato Soup:
1 Onion (sliced)
3 Garlic Cloves (smashed)
1 Celery Stalk
1 Carrot
2 Cans of Whole Tomatoes
1 Large Box of Chicken Broth
Bundle of Thyme (tied with sting- you will be removing this)
Bunch of Basil
2 Bay Leaves
2 Cups of White Wine
1 Teaspoon of Tabasco
Salt & Pepper to taste
* You can also add Sour Cream or Heavy Cream to make the soup more rich

Start off by sauteing the onion, garlic, celery & carrot (you don't have to finely chop these because you will be blending everything in the end.) Once vegetables are soft, add the bay leaves, whole tomatoes, chicken broth, & white wine and bring to a boil. Once boiling, reduce to a simmer and cook for 30minutes. After 30minutes, remove the thyme bundle & bay leaves. Bring out the emulsion hand blender (best kitchen tool!) Slowly begin to blend the soup. Once smooth add salt, pepper & Tabasco.

Grilled Cheese:
Favorite Bread (I used Sourdough)
Favorite Cheeses (I used Mozzarella & Gruyere)
Spinach (optional)

Turn oven on to 400 degrees. Add bread to cookie sheet and bake until break becomes golden. Remove toast from oven and add cheeses. Put back in the oven and broil until cheese is melted. Below you can see my "make-shift" panini press.
