Healthy Dinner for One

This is an quick, easy & healthy meal that I like to have when BS is traveling and I'm only cooking for myself. This soup is so easy, you don't even need to measure anything! Basically you make however much you want to eat. You can also add whatever vegetables you like! Traditionally, this is called Egg Drop Soup...yes, just like what's in the Chinese restaurants except healthy! I do not add corn starch or MSG to mine. This is also great when you have a cold because you get the nutrients from the chicken broth as well as protein from the egg! Below is what I did:

Ingredients:
Chicken Broth
Eggs
Scallions
Snow Peas
Parsley
Salt & Pepper


Bring Chicken Broth to a boil

Whisk Eggs

Add Salt & Pepper


Chop Scallions and Snow Peas


Slowly pour in the egg mixture, scallions and snow peas

Enjoy!
