Mediterranean Seafood Stew

Ok, ok I know I haven't posted a food post in a looong time so last Saturday night I decided to make a super easy yet super impressive dish!

1/2 onion (chopped)
1 celery stalk (chopped)
1 carrot (chopped)
1 Fennel Bulb (sliced)- use frons as well
3 Cloves of Garlic (chopped)
1 Tablespoon of dried Thyme
3 Anchovie Filets
1 Tablespoon of Crushed Red Pepper Flakes
3 Cups of Dry White Wine
1 Large Box of Low Sodium Chicken Stock
1 Medium Bottle of Clam Juice
1 Can of Crushed Peeled Tomatoes (I used whole peeled and crushed myself)
1 pinch of Saffron Threads
2 Sprigs of Fresh Rosemary Leaves
1 Bay Leaf
1lb of Talapia (or other white fish)
1lb of Littleneck Clams
3 calamari Tubes and 4 tenticles

Below is what I did:

Cook carrot, onion celery & fennel in olive oil until soft

Add garlic

Add thyme and anchovies

Add red pepper flakes

Add the wine, clam juice, chicken stock, crushed tomoatoes & saffron

Add rosemary & bay leaf and bring to a simmer

Bring soup to a slow boil

Add fish

Then clams

Right before serving add the calamari
