Spicy Sausage, Mushroom & Spinach Lasagna
Lasagna is always a great thing to make on a Sunday because then Monday nights' you don't have to cook! This past Sunday I decided to switch out the standard ground beef for sausage! We got mild Italian sausage and Crazy Atomic Sausage! And to lighten things up a bit I decided to add fresh spinach and mushrooms. Below is what I did:

| These no boil noodles are the best! |

| 1/2 an onion chopped (for the sauce) |

| 3 Garlic cloves, chopped (for the sauce) |

| Sautee onion & garlic in olive oil until onions become translucent |

| Add crushed tomatoes and 1 tablespoon of dried oregano |

| Remove the casings from the sausage |
![]() |
| Cook the sausage (I added some fennel seeds as well) |

| Start layering! Non stick spray at the bottom of the pan |

| Place on cookie sheet to keep your oven clean. 400 degree oven for 40 minutes |
