A New Staple

So the other night I was perusing thru the grocery store trying to figure out what to have for dinner and I walked by the "Mediterranean/Olive Bar" and was inspired. I decided to make up a Mediterranean recipe for chicken. This is such a simple dish that it will now become a go-to in our household.

Split Chicken Breasts (on bone)
1 Lemon
1 Tablespoon of dried oregano
1 Tablespoon of chopped garlic
1 Teaspoon of crushed red pepper flakes
Salt & Pepper

Orzo Salad
1 Box of Orzo
2 Tomatoes (chopped/sliced)
1/2 a cucumber (chopped/sliced)
White Onion (as much or as little as you want)
3 Tablespoons of parsley (chopped)
Feta Cheese & Olives
1 1/2 Tablespoons Red Wine Vinegar
3 Tablespoons Olive Oil
1Tablespoon of dried oregano
Salt & Pepper

Mix all of the marinade ingredients. Wash and pat the chicken breasts dry. Add to the marinade, cover and refrigerate for 30 minutes. While chicken is marinating, boil water to cook the Orzo. Once Orzo is cooked, strain and put in refrigerator to let cool. Once cool, begin assembling the salad.

 Below is what I did for the chicken:

Feta and Olive mix to add to salad

Sear chicken in a Med High pan. 4-5minutes on each side (until golden)

Put chicken in 400 degree oven for 20minutes (depending on thickness)

Assemble the salad
