New Favorite Soup

So the other night I decided to make soup (I'm still trying to keep the flu out of our home.) I wanted something loaded with vegetables but still needed to have a meat incorporated into it for BS.  I basically combined my chicken soup, vegetable soup & minestrone soup (adding + subtracting a few things here and there) and I have created a real winner here! This recipe is SO healthy, SO delicious and it really fills you up! Below is what I did:

Ingredients:
2 large cans of Swanson's (has to be) low sodium chicken broth
2 regular cans of tomato sauce
1/2 box of cut spaghetti noodles (or any small pasta)
4 carrots, chopped
4 stalks of celery, chopped
1 small package of white button mushrooms, sliced
1 handful of green beans, sliced
1 small head of broccoli, break apart into tiny pieces
1 bunch of fresh spinach, chopped
1lb of groud beef (or ground turkey)
1 shallot, chopped
2 garlic cloves, smashed (leave whole so you can remove)
1 cup of white wine
salt & pepper

Directions:
Sautee 1 chopped shallot and 2 garlic cloves in a 1/4 cup of olive oil. When the shallot is translucent, add the ground beef. Once the ground beef is cooked, add the following veggies (carrots, celery, broccoli & green beans.) After about 10 minutes and stirring occasionally, add 2 large cans of Swanson's chicken broth, 2 cans of tomato sauce, 1 cup of white wine and bring to a boil. Once at a boil turn stove to med-low temp (simmer) for 15 minutes. Add mushrooms & pasta. Taste for seasoning (I added 1/2 tablespoon of kosher salt & 1 1/2 tablespoons of black pepper. Add spinach right before serving.
