A Quick & Healthy Dinner

The other night I decided to make a 3 bean salad to have in the fridge for the week. It is a great side, and the fact that it only gets better the longer it sits makes for a super quick and simple accompaniment to any weeknight meal! Once I made the bean salad for the week, I moved on to dinner for that night. Dover Sole, simply baked in foil with shallot, lemon, white wine & dill. Add a baked potato (with extra sour cream-ok not the healthiest but I love it!) and a salad and you have a super simple weeknight dinner!

Bean Salad
Choose 3 Beans of your choice(mine: Kidney Beans, Garbanzo Beans & Great Northern Beans)
Olive Oil
Red Wine Vinegar
1 Shallot

Rinse & drain the beans and place in a bowl. Chop shallot & parsley & add to the bowl. Add 1/2 cup of olive oil and 1/2 cup of red wine vinegar. Salt & Pepper to taste. Mix well and store in fridge for up to a week.

1lb of Dover Sole (enough for 2ppl)
1 Lemon
4 Sprigs of Fresh Dill
1 Shallot
1/2 cup of white wine

Preheat oven to 400 degrees. Rinse fish and pat dry. Place fish on foil and add salt & pepper to fish. Layer dill, lemons & shallots on top of fish and pour white wine over the fish. Cover with more foil to create a packet. Place in oven for 15minutes.
