Crustless Spinach, Tomato & Feta Quiche

Last night was my first attempt at making quiche and I have to say it has made it to my "staple" list! My Dad, GMC makes the BEST quiches and makes several combinations- you just need to know the basics! I decided to put a Greek twist on mine by doing feta, spinach & tomato, but the possibilities are endless (broccoli, cheddar, asparagus, artichoke, sausage, peppers, onions, potatoes, zucchini...) basically whatever you have in the fridge can work. Use your imagination and get creative! Below is the recipe for the version that i made.

1 (10oz box of frozen spinach)
2 oz feta cheese
1/4 cup of parmesan cheese
1/2 cup of shredded mozzarella cheese
1 cup of milk
4 large eggs
1/2 tsp garlic
handful of cherry tomatoes or 4 or 5 slices of regular size tomatoes

Preheat oven to 350 degrees.Thaw frozen spinach in microwave. Squeeze water out with a dish towel. Spray pie dish with non-stick spray. In a bowl, combine eggs, milk, garlic, Parmesan cheese & black pepper.Spread spinach over bottom of pie dish. Layer feta cheese over the spinach. Layer tomatoes next. Pour egg mixture over spinach, feta & tomatoes. Sprinkle mozzarella cheese over top and finish off with black pepper. Place in oven for 45 minutes (top should be golden brown and center should be solid. Serve hot, cold or at room temperature!
