Best Meatballs & "Gravy"

So I think I found my new favorite Meatballs & Gravy recipe! This super easy recipe that I tweaked just a little bit will now be my go-to. The other night I decided to make a big batch of it (so I could freeze half of it for when the bambino comes and BS can just defrost it for a quick and easy dinner.)
Below is what I did:

1. I did not brown the meatballs in a saute pan, I simply baked them- I didn't want a hard crust on the meatballs.
2. I did not use pancetta in my sauce (trying to keep it a little figure friendly (was not missed!)
3. I only used 1 large onion for the sauce (not 2)
4. I did not use San Marzano tomatoes...they were out at my store
