Use What You Have: Mediterranean Chicken


Yesterday was one of those days where I hadn't made it to the grocery store and by the time dinner came around I was searching the fridge to see what I could whip up. In the freezer I had chicken & spinach. In the fridge I had some Greek olives left over from so apps that we had over the weekend, I always have feta cheese in the fridge and of course tomatoes. Below is a little Mediterranean dish that I whipped up with items that I happened to have on hand.

Salt, Pepper & Oregano on the chicken

2 tomatoes chopped 

1 package of frozen spinach, thawed

Feta cheese and olives

Sear the chicken on both sides


Deglaze pan with 2 cups of white wine, add 1 tablespoon of chopped garlic. Add tomatoes, spinach & olives and warm thru


Add chicken back to the pan

Right before serving add the feta

Served with rice- enjoy!
