Lobster Rolls

The other day it was 70 and sunny here in Houston (sorry to everyone up there in NE!) and I was wanting something fresh and summery for dinner. I was at the grocery store and saw that they had a special on lobster tails- 2 for $14! So I decided to make a couple lobster rolls for BS and I for dinner! I had originally bought 2 tails but as soon as I started to make the lobster salad I realized I needed 2 more tails so for this recipe I suggest 2 tails per roll. Below is what I did:

Ingredients:
4 lobster tails
1/2 cup of chopped  celery
1 teaspoon of celery seed
1 cup of Hellmans mayonnaise
1 tablespoon of chopped parsley
1 tablespoon of chopped dill
1 teaspoon of lemon zest
Juice from 1/2 a lemon
2 hot dog rolls (butter rolls and put in frying pan for a few seconds to warm thru)
Bibb Lettuce
Salt & Pepper




Boil tails for 2-3minutes




Submerge in an ice bath to cool down
