A Yummy Take on Shrimp

The other night I whipped up a super easy and yummy shrimp dish! It has kind of a Mediterranean feel to it. Below is what I did:

Orzo (1/2 small box- for 2ppl)
1 Head of Radicchio, sliced thing
1 Head of Endive, sliced thin
1 Fennel Bulb, sliced thin
18 Shrimp, cleaned & de-vained
1 Orange, sectioned and cut in half
3/4 cup of crumbled feta
1/4 cup of parsley, chopped

Clean and de-vain your shrimp. Pat dry and add 1 tablespoon of olive oil, 1 teaspoon of pepper and a heavy pinch of salt, mix in a bowl and set aside. Slice all your vegetables (I used a mandolin.) Cook orzo according to directions. Over high heat, cook the shrimp (2 minutes on each side.) Next, place all ingredients in a bowl. In a small bowl combine a 2 to 1 ratio of olive oil & champagne vinegar. Add 1 teaspoon of pepper and a heavy pinch of salt. Add 1 teaspoon of chopped garlic and t tablespoon of Dijon mustard- mix well. Pour dressing over salad and toss. Finish salad with squeezing the juice of 1 lemon over the entire salad and enjoy!
