Everything But the Kitchen Sink

Hey Everyone- I have a super yummy dish for you! This is a great meal because it is easy and you can switch up the ingredients with what you have on hand. Below is what I did:

2 Chicken Breasts
3 Ears of Corn (remove kernels from the cob)
2 Handfuls of Fresh Spinach
1 Cup of Chopped Tomatoes
1/2 Cucumber, chopped
1 Cup of Cooked Orzo
2 Lemons
1 Tablespoon of Crushed Garlic
1 Avocado, cut into chunks
Red Onion

Juice from 2 Lemons
1/2 Cup of Olive Oil
2 Tablespoons of Crushed Garlic
1 Tablespoon of Black Pepper
1 Tablespoon of Salt

Put Marinade Ingredients into a plastic bag with the chicken and marinate for 1-2 hours

Husk the corn

Stand corn upright in a large bowl and cut kernels off with a knife

Melt 1 Tablespoon of Butter in a sauté pan

1 Teaspoon of Pepper and 1/2 Teaspoon of Salt to corn

Remove chicken from fridge 20 minutes before you start cooking

Once butter has melted, add corn and cook for 15 minutes on medium heat

Add Asparagus to the pan

Cook Orzo and chop up these ingredients and add to bowl

Add Spinach to the bowl (the cooked orzo will wilt the spinach)

Add everything to the bowl and add 1/4 cup of Red Wine Vinegar & 1/4 cup of olive oil to bowl and mix

Enjoy! (You can also add feta to this!)
