Hi Everyone! The other night I took a stab at making Carbonara. I had never tried to make it and have to admit that I've always been a little intimidated by the dish. But....TRY NEW THINGS! I decided to try Eric Ripert's recipe because we had loved his restaurant Blue in Grand Cayman. I have to say, the end result was delicious, however, I would use less Parmesan cheese. I'd use a 1/2 cup instead of 1 1/2 (it made the pasta too dry.) All in all Carbonara is a VERY simple dish!
