Go-to Lunch

Hey Everyone! I wanted to share one of my favorite lunches with you. This recipe was born when I thought I had nothing in the fridge one day for lunch. I grabbed some items that I always have on hand (eggs, basil or spinach, mustard, tomatoes, olive oil & red wine vinegar.) Here's what I did:


Lightly toast bread (I used Sourdough Rye)

Fry 2 eggs


Slice tomato and season with salt & pepper

German mustard


 


Eggs seasoned with salt & pepper, cooked to your liking (sunny-side up for me!)

Drizzle with olive oil & red wine vinegar and enjoy!
