Lemon Artichoke Soup

I have a small obsession with the Lemon Artichoke Soup at Adair Kitchen so I decided to try and recreate it. Although I didn't hit the nail on the head exactly, I think my version was really good! Below is what I did:

2 cans of artichokes
2 Lemons (I'd up this to 4 next time)
2 quarts of low sodium chicken broth
1 potato, peeled and cut into cubes
1 large shallot, chopped
4 cloves of garlic, chopped
1 1/2 Tablespoons of salt
1 Tablespoon of pepper
1/2 cup of sour cream
Handful of parsley, chopped

Sauté potatoes, shallots & garlic until potatoes are fork tender

Add Artichokes

Transfer everything to a large pot

Add chicken broth and bring to a boil and then reduce to a simmer

Add lemon juice & parsley

Blend using an emulsion blender

Add sour cream

Add 1 1/2 tablespoons of salt & 1 tablespoon of pepper
